Walking through the places of the Jewish presence in Bologna, from the late fourteenth century to the age of the ghettos, until the final expulsion at the end of the sixteenth century, the rules that have always governed Jewish dietary laws (kashrut), the ritual aspects, and the peculiarities of dishes rich in spices and exotic flavours that have become part of the Italian culinary tradition will be highlighted.
